Tim Tam Cheesecake by Jo Brigden-Jones

Two weeks ago we published Ben Brown's Athlete Roast, which was delicious and nutritious! Then we came across this Tim Tam Cheesecake recipe from London Olympian Jo Brigden- Jones. This is probably a good one for athletes that eat the house down and never gain weight anyway. But hey, who can resist the world famous and super yummy Tim Tam's!? So give it a go with this recipe from Jo:
Jo Brigden Jones | Sydney - I was given a packet of Tim Tams recently and found myself snacking on them 1...2…5 they started to disappear…oops! I am not one to buy a packet of Tim Tams so I thought, why am I eating these!? I have to do something. It was either chuck them out or create something with them. I felt like baking so decided to make a cheesecake with them! I did a bit of research on recipes and decided to modify some of them and create my own recipe. So below is my version of an epic Tim Tam cheesecake. When I tasted the cheesecake, I realise it was pretty stupid of me to create this as now I will find it hard to resist more of this cheesecake. Looks like my grand idea to stop me eating Tim Tams has back fired!

Ingredients:
180g chocolate Tiny Teddies
80g butter, melted
375g cream cheese, softened
1 teaspoon of vanilla essence
1/3 cup of caster sugar
1 Cup thickened cream
100g white chocolate
3 teaspoons of powered gelatine, dissolved in ¼ cup boiling water
250g Original Tim Tams, roughly chopped

Method:
- Place the Tiny Teddies in a food processor and blend into a fine crumb. Stir in the melted butter then press the mixture into a sprint-form tin and refrigerate.
- Using an electric mixer beat the cream cheese, vanilla essence and caster sugar until smooth. Then beat in the thickened cream.
- Melt the white chocolate over low heat. Dissolve the gelatine in boiling water. Stir both the white chocolate and gelatine into the cream cheese mixture.
- Mix the Tim Tams into the cream cheese mixture then pour over the Tiny Teddy base.
- Refrigerate for 3 hours, or until set.
