I have never been the biggest fan of breakfast but after years of hard training I have realised that it is crucial to refuel my body after my mornings training session.

Think of it as a reward for your body after you have just tortured it on the water! One of the best foods to eat for breakfast is eggs. Packed with protein, it provides a well-balanced meal with the addition of a carbohydrate source. I often cook up an egg dish when I get back from training. It’s quick and easy to do but it can be a bit daunting if you’re unsure of how to cook the perfect eggs. So challenge yourself and try my simple recipe.

The best eggs to use are fresh free range eggs. I am lucky enough to have 5 chickens in my back yard so I get to use freshly laid eggs everyday plus I know they are organic and free range! Because I need to watch my energy intake I usually have 2 whole eggs and then just use the egg white of another egg. It just cuts out some of the extra fat that the yolk contains and increases my protein intake. I promise you can’t even taste the difference! Also pick a nice fresh bread to serve your eggs on. Try and avoid white bread as it doesn’t provide you much in the way on nutrients.

Scrambled eggs, avocado & rocket on toast

Ingredients (serving for one):

  • 3 eggs
  • 1 tablespoon milk
  • Salt & pepper
  • Nob of butter
  • 1-2 slices of bread
  • ¼ avocado
  • 1 fresh lime
  • ½ cup rocket

Method

  1. Crack the eggs into a bowl, add in the milk and a few grinds of some salt and pepper. Wisk well.
  2. Over low heat, melt some butter in a saucepan. When the butter is frothing pour in the egg mixture. Keep the pan on low heat and continually stir the eggs using a wooden spoon. Take the eggs of the heat when they look fluffy but still slightly undercooked as the heat from the pan will continue to cook them until served.
  3. Put your bread of choice in the toaster. When nicely brown spread the avocado over the toast. Squeeze a slice of lime and a pinch of salt over the avocado.
  4. Place the rocket on the avocado that’s on toast then evenly spread the cooked eggs over the top.
  5. Grab your knife and fork and dig in!
